cup red (or yellow) corn, cooked (frozen must be thawed and drained) |

cup pepitas (roasted pumpkin seeds without the hulls) |

Directions:
- Cook rice according to package directions. Drain tofu in a colander or press between paper towels to absorb excess moisture. Cut tofu into ¼ -inch thick strips. Marinate strips in ¼ cup What You Do With Tofu!® Smoky Chipotle Sauce for a minimum of 10 minutes.
- Heat large, deep nonstick skillet or wok over medium-high heat. Add 1 teaspoon canola oil, stir-fry tofu for 2-3 minutes, or until nicely browned. Add leftover marinade to skillet and mix well with tofu until warmed.
- Whisk together 1 tablespoon of What You Do With Tofu!™ Smoky Chipotle Sauce, 1 tablespoon canola oil and lime juice to create a light dressing.
- Place salad greens in the center of each dinner plate, layer rice, corn, tomatoes and avocado. Transfer tofu strips to plate and drizzle dressing over salad. Garnish with pepitas, sprig of cilantro and lime.

Helpful tips:
- The more water you get out of the tofu, the more flavor will be absorbed from the sauce.
- The longer you marinate, the more intense the flavor.
- The longer you stir fry the tofu, the more the sugars in the sauce will caramelize and take on a roasted, sweet flavor.
